Masala Dosa: The Iconic South Indian Breakfast Delight

Masala dosa is a popular South Indian breakfast dish that has become a favorite of people all around the world. This delicious, savory crepe-like pancake is made from fermented rice and urad dal batter, and is typically served with a filling of spiced potatoes and onions, and a variety of chutneys and sambar.

To make the batter for masala dosa, you will need to soak rice and urad dal separately for at least 4 hours or overnight. Once the grains have soaked, grind them separately into a smooth paste, and then mix them together with salt and water to create a thin batter. Allow the batter to ferment overnight or for around 8-10 hours, until it doubles in volume and becomes light and fluffy.

To make the filling for masala dosa, start by boiling some potatoes until they are cooked through, and then mash them with a fork. In a separate pan, heat some oil and add mustard seeds, cumin seeds, chopped onions, and green chilies. Once the onions become translucent, add some chopped ginger and garlic and sauté until fragrant. Then add some chopped tomatoes and cook until they are soft and mushy. Add the mashed potatoes, turmeric, salt, and some chopped coriander leaves, and mix everything together.

To make the dosa, heat a non-stick pan over medium-high heat and ladle some batter onto the pan. Use a circular motion to spread the batter out into a thin, crepe-like layer. Drizzle some oil around the edges of the dosa, and cook until the bottom is golden brown and crispy. Then, flip the dosa and cook the other side until it is lightly browned as well.

Once the dosa is cooked, add a scoop of the potato filling to the center of the dosa, and fold the edges over to create a neat, triangular shape. Serve the dosa hot with coconut chutney, tomato chutney, and sambar.

Masala dosa is not only delicious, but also a healthy breakfast option as it is low in calories and high in protein. It is a great way to start your day with a nutritious meal that will keep you energized and full until your next meal.
